So for the intraday, I run a backtest every night, then use the assets for the next 24 hours. But retest every night.
This, to me, runs in a sort of tandem.
After I run a backtest, which gives me a list of pairs, I run the same method, but until this point in time, I use only the assets that pass a criteria to trade.
I would like to just run one code once, but it doesn't seem like the right way for pair trading. Is this normal?

Running a backtest every night to decide which assets to trade the next day for intraday pair trading looks fine to me. It basically helps you stay on top of market changes and use the latest data to make better decisions.
